  • Dimethyl disulphide:

This chemical produces naturally by roasting a green coffee bean. It is present in your coffee to enhance the flavor of it and it is in a minimal amount, which you cannot even detect.

  • Acetylmethylcarbinol:

This yellow liquid is the reason behind the buttery flavor in the coffee.

  • Putrescine:

Putrescine is produced when E. coli bacteria in the meat releases amino acid, which results in making poisonous to eat. Therefore, Putrescine is naturally present in the coffee.

  • Trigonelline

Trigonelline is a molecule of niacin with a group of methyl attached with it. The coffee gets its earthy taste and sweet when it breaks down into pyridines and also it helps to prevent bacteria from attaching with your teeth.

Niacin:Trigonelline becomes unstable when it reaches above 160 degrees F, which result in the detachment of the methyl group, releasing the niacin (vitamin B3) into your cup.
